A local food truck is opening a brick-and-mortar space inside Kansas City food hall Parlor. The Hungry Hatch, led by Angie Maciel and her daughter, Katie Brill, opens Wednesday. It replaces Sushi MO!, a sushi and bento box eatery that opened earlier this year.

Maciel’s husband also owns a food truck, and she started the business to fill a gap in the local food truck scene. As a regular at food truck events, she noticed the lack of healthy options. […]
